We have been serving an appetizer, our version of the traditional meal of the local miners during Galena's lead-mining boom.  It is the Cornish Pasty, a meal that could be wrapped in a kerchief and eaten by hand for lunch.  It is simply a meat pie, and since there have been many requests for the how-to.... I have written down (always the tough part) and will share the recipe with you. 

Crust:   2 c    flour
            2/3 c butter
            2 t     dried parsley
            1/4 c  sugar
            1 t     salt
            1/2 t  black pepper
       +/-7 T    cold water
Cut the butter into the flour until well blended, stir in remaining ingredients, except water.  Gradually add water, turning with wooden spoon until dough clumps together.  Roll dough onto a floured surface, 1/4 inch thick.  Cut into 4 inch circles.  Re-roll each circle until about double in size and 1/8 inch thick. Cover prepared crusts and set aside.
Filling:   1#    very lean ground beef   (We, of course use the Irish Hollow grass-fed)
             1      large yellow onion (Finely chopped)
             4      cloves garlic, minced
             1 jar Corn Relish (Irish Hollow CR is the best!)
             1 T   Chili Powder
             Salt and Pepper, to taste
Lightly saute onion and garlic in a large frying pan, and ground beef and brown, breaking up to small pieces.  Add remaining ingredients, and stir. 
Assembly: 2 eggs, beaten
Brush crusts with beaten egg, dollop approximately 2T of filling in center.  Fold crust over to form half-moons. seal edge with fork, and trim any excess dough. Brush top with beaten egg.
Bake in 350 degree oven for about 17 minutes, or until golden brown.  Serve immediately (maybe with a dipping sauce!)
