Fresh from the Irish Hollow Farm, whole, organic, free range chicken will be served at Irish Hollow this Holiday Season. We thought that we would share our recipe for our friends in advance. First of all, let me say that I love the flavor of chicken, and this way of preparing it allows for full, unmasked flavor, and perfect succulent texture and juiciness.
To prepare your Irish Hollow bird:
Preheat oven to 475 degrees.
Wash and pat dry. Rub with olive oil, and sprinkle with salt and pepper. Feel free to stuff herbs, onion, garlic etc. into the cavity if you would like to enhance the flavor. Dump several cups of Rock salt into the bottom of your foil lined roasting pan. Nestle the bird into the salt (Which will infuse flavor and absorb all of the grease without drying out the chicken!)
Roast on center rack for about 50 minute for 6-7 pound bird, adjusting for weight as necessary, until meat thermometer reads 180 when inserted into the lower breast. Remove and let rest for 15 minutes before carving.
