The tomato crop is tremendous this year! We planted a great variety of heirlooms. In spite of the drought, and maybe because of the constant watering and rich soil, have we got tomatoes.... and are they beautiful! Instead of putting them up in the traditional manner, this year we have created a SMOKED TOMATO JAM. This is the perfect compliment for pork dishes, hard cheese, and atop a great corn chowder. Thought you might like the recipe.

SMOKED TOMATO JAM
Ingredients:
3 Lbs. Ripe Tomatoes
2 Tbs. Balsamic Vinegar
1/2 C. Brown Sugar
1 Tbs. Chili Powder
1 Tbs. Liquid Smoke
Directions: Cut tomatoes in half, crushing slightly to release some liquid. Place in large saucepan and simmer, stirring often. Add remaining ingredients and reduce, continuing to stir frequently until a chunky jam consistency is achieved. Remove from heat. Store in fridge. Enjoy!
